Hello everyone!
Has anyone tried the Root Cellar Sour from Squatters? I had some a week ago and it was quite enjoyable, wondering if anyone has had some good pairings with it. I was also wondering if anyone has aged this style of beer and what changes they noticed.

I haven't paired it with anything yet. But if you want to cellar some (and you should) I think you'll find the tartness will become a little more vinious. However this is a Wild Ale. it will do what it will do.

I am new to this cellaring of beer but I plan on it. However I went to Squatters store today and they only had 20 bottles left! The Beer Store on 300 West was sold out and not getting anymore so if you want some more I would suggest getting it. I picked up a few while I was there and want to get a couple more if I can before they are all gone. I don't know what their plans are for a future version, but talking to the bartender there he said that since it was received so well and there are Sweaters and T shirts with the logo he says there will probably be another run in the near future. So hopefully that is the case.

I've got half a dozen or so and this has become my favorite beer. I was at Squatters last Saturday with some friends and most everyone liked it. Some just aren't quite up to sours yet but the 529 fans loved it. I'm going to try and force myself to hold on to at least a bottle for the next year.

I loved this beer also. I compulsively hide good beer from myself in my cellar, and I'm sure it will evolve in a unique way over the next few months. I do hope they make another release.

Update on the aging of this beer. I broke down and drank my last bottle at a party... It's been too short of a time to tell what a real long term aging will do for it. I hope even more now that they make another release.
